Black Bean Smothered Sweet Potato served with fluffy eggs

Ingredients
4 sweet potatoes
2 teaspoons olive oil
1 can of black beans
salt and pepper
1 can diced tomatoes
1 clove garlic
1 teaspoon  cumin
1 teaspoon chili powder
Sour cream (optional)
Chives (optional)

Preparation
Black Bean Smothered Sweet Potatoes:
Poke sweet potatoes with a fork in several places. Microwave on high for 12-15 minutes. If you would prefer, wrap sweet potatoes in foil and place in a preheated 375ºF oven for 30-40 minutes. Add olive oil and garlic and cook in a small saucepan. Then add beans, tomatoes, and spices and cook for 4-5 minutes. When potatoes are done and cool enough to handle cut them lengthwise, press open, and spoon the bean and tomato mixture evenly into each potato. Add optional toppings.

Scrambled Eggs:
Heat a skillet with 1 teaspoon of olive oil. Crack 8 eggs in a bowl and mix together. Add to the skillet and stir consistently. Keep stirring until eggs are cooked through. Add salt and pepper to taste.

• Sweet potatoes are high in Vitamin A, which is important for normal vision.  Sweet potatoes support a healthy immune system.
