We tried a simple quick pickle using jalapenos.
- Thinly slice 8 medium to large jalapenos, leaving seeds inside.
- Combine 1/2 cup apple cider vinegar, 1/2 cup white vinegar, and a teaspoon salt in a small dish. If you'd like a sweeter pickle, add a tablespoon of white sugar, for a spicy pickle add a teaspoon of red pepper flakes. Stir well to dissolve salt.
- Place pickles in a glass jar or container or bowl, and cover. Leave in the refrigerator for a couple of days or until jalapenos taste like a pickle!
