1 cup of rice noodles, cooked and set aside
Spicy greens mix from Carriage House Farm
1 Red pepper sliced thinly
*Optional cooked shrimp or tofu
The awesome thing about rice wraps is that you can make them to your own taste! We like to prepare all of the ingredients on a large platter for family style dining. Have a bowl of warm water on the table to dip the rice papers (they will stick together if made ahead of time). Add all your veggies, noodles, peanuts and greens and roll up the sides "burrito style".
Serve with soy, sweet and sour or peanut sauce.
