1 red onion*
6 ears of corn - cut from cob*
Juice of 1 lime
2 cups chopped seeded - tomato 3 large tomatoes*
2 small jalapeños diced*
1bunch cilantro chopped - about 1/2 cup*
- Cook bacon to render the fat.
- Cook onion for about 5 minutes, add corn.
- Cook for another 5 minutes until corn starts to brown slightly.
- Remove from heat and let cool. Add rest of ingredients and toss well. Serve at room temperature.
