Raw Beet Salad
2-3 medium beets, washed and peeled, sliced thinly- ideally with a mandolin
2 ounces of goat cheese
Salt & Pepper to taste
1/3 cup of walnuts, chopped
*(Optional- spinach or salad greens to serve under the beets)
Arrange the beets flat or fanned out on a platter. Crumble the goat cheese and chopped walnuts on top. Sprinkle with salt and pepper and drizzle with balsamic reduction/vinegar. Serve chilled.
