Preparation
Shepherd’s Pie:
Preheat oven to 400ºF. Peel and quarter sweet potatoes and place in a medium sauce pan. Cover with water and bring to a boil. Cook potatoes until tender, about 20 minutes. While potatoes are cooking, place carrotse in a large skillet with 4 tablespoons of oil, then add onions. Add the lamb and cook until well done. Season with salt and pepper. Add Braggs Liquid Aminos and water or beef broth. Cook uncovered for 10 minutes, adding more water or broth if the lamb starts to dry out. When the sweet potatoes are done cooking, remove them from the pot and place them in a bowl. Mash them with a hand masher or fork. Season with salt and pepper. Spread lamb and vegetable mixture along the bottom of an ovenproof dish and spread mashed potatoes along the top. Bake until browned, about 30 minutes.
Roasted Brussels Sprouts:
Toss brussels sprouts with a pinch of salt, pepper, and 1 teaspoon of olive oil. Place them in a single layer in a baking pan and roast in a 400 degree oven for 35 minutes.
